Colombia - El Paraiso Red Plum Castillo

ed Plum coffee is renowned for its exceptional quality and distinctive flavor profile, primarily attributed to the cutting-edge processing techniques at Finca El Paraíso in the Cauca region of Colombia. Produced by the visionary Bermudez family, this coffee represents a masterclass in modern coffee science, transforming the dependable Castillo variety into something both vibrant and unforgettable.

The key characteristics of Red Plum - Finca El Paraíso are:

Innovative Processing: This coffee undergoes a controlled double fermentation using a custom "Red Fruit" culture developed from coffee mucilage and cascara. This specific method is designed to amplify complexity while ensuring remarkable consistency across every batch.

Thermal Shock Wash: The process is finished with a signature thermal shock wash and precision drying. This technique "locks in" the volatile aromatic compounds, resulting in a vibrant, aromatic cup that is an unmistakable expression of modern Colombian coffee.

Flavor Profile: This coffee is often described as having a brilliant acidity with a medium, well-balanced body. Flavor notes include a complex bouquet of plum, cherry, raspberry, and granadilla (passion fruit), rounded out by the deep sweetness of panela.

Growing Conditions: Grown at a high altitude of 1960 meters, the coffee trees thrive among a diverse ecosystem of plantain, banana, and various fruit and flower trees. This shade-grown environment contributes to the dense, flavorful development of the beans.

Versatility: Red Plum performs beautifully across all brewing methods. Whether prepared as a precise pour-over or a modern espresso, it delivers a consistent, high-scoring (93 points) experience with a prolonged, sweet cherry aftertaste.
