Colombia - Finca El Poema (Anaerobic) coffee is celebrated for its remarkable depth and innovative processing, originating from the high-altitude mountains of the Caldas region. Produced by Sebastian Muñoz Duque, this micro-lot is a testament to modern Colombian viticulture, where traditional farming meets advanced fermentation science to create a truly layered and complex cup.
The key characteristics of Colombia - Finca El Poema are:
Anaerobic Fermentation: This coffee undergoes a specialized anaerobic process where the cherries are fermented in sealed, oxygen-free tanks for 90 hours. This oxygen-deprived environment allows the natural sugars to break down slowly, forcing intense fruit flavours into the heart of the bean and resulting in a clean, vibrant profile with extraordinary clarity.
Altitude and Origin: Grown at 1750 metres in the Vereda La Muleta area of Palestina, Caldas, the coffee benefit from the region's rich volcanic soil and cool mountain air. These conditions ensure a slow maturation of the coffee cherry, which is essential for developing the bean's signature sweetness.
Flavour Profile: Finca El Poema offers a harmonious and indulgent sensory experience. It is characterized by a heavy, syrupy body and a sophisticated flavour profile that features prominent notes of stone fruit and strawberry, beautifully balanced by a rich foundation of chocolate, vanilla, and buttery caramel.
Sustainable Craftsmanship: Sebastian Muñoz Duque took over the farm in 2016, focusing on value-added processing and sustainable land management. By integrating coffee production with local tourism and focusing on high-quality micro-lots, Finca El Poema has become a shining example of the "new wave" of Colombian specialty coffee.
